Healthy Banana Oat Muffins

1 1/2 cups unbleached all-purpose flour

1 cup oats

1/2 cup chopped pecans

1/2 cup white sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

3/4 cup milk

1/3 cup cinnamon apple sauce

1/2 teaspoon vanilla extract

1 cup mashed bananas

Combine flour, oats, pecans, sugar, baking powder, baking soda, and salt.  Set aside. Combine egg, milk, apple sauce, vanilla extract, and bananas.  Pour banana mixture into oat mixture.  

Combine.  Pour mixture into a lined muffin pan.  Bake at 400 degrees for 18-20 minutes.
